Simply Elegant Roast Pork
Note: You can use pork Loin or Tenderloin for this dish. While elegant it could
not possibly be simpler to prepare.

1- 2 pound pork roast
3 – TBSP. Ariston or any syrupy Balsamic Vinegar
3 – TBSP. Olive oil
1 – Tsp. Dijon mustard
2 – Tsp. Herbs de Provence
1 – medium shallot minced
2 – garlic gloves, grated or minced
Salt and pepper to taste
How to prepare this recipe:
Combine Pork and all ingredients in a bowl and refrigerate covered for at least 1 hour but even better overnight.
Preheat oven to 425
Place Pork in a baking dish sprayed with PAM
Roast for 10 minutes and then lower the heat to 350. Roast for 40 minutes more until the internal temperature of the pork reads 160. Cover and allow to rest in a warm place for 10 minutes. Slice and serve (if you like) with a compound butter made with the same herbs you used to marinate the pork.
