Note: The chicken needs to be marinated for at least 40 minutes without the juice of the lemon. Add the juice just before cooking or the lemon in the Balsamic mixture will start cooking the chicken.

2- Split breasts of chicken
3 – TBSP. Ariston or any syrupy Balsamic Vinegar
3 – TBSP. Olive oil
1 – Tsp. Dijon mustard
Juice and zest of ½ lemon
2 – Tsp. Herbs de Provence
1 – medium shallot minced
2 – garlic gloves, grated or minced
Salt and pepper to taste
How to prepare this recipe:
Preheat oven to 350
Combine all ingredients except the lemon juice in a bowl. Toss to combine. Allow to marinate for 40 minutes or overnight.
Place chicken skin side down on a baking pan sprayed with PAM
Roast for 25-30 minutes turn over and roast 25 minutes more or until the skin gets golden brown.
